What I Eat to Gain Muscle

As my aunt recently commented, “I don’t see how you have time to do anything but train… and EAT!”  And after seeing everything I eat in a day, you’ll probably agree!!

Breakfast: zucchini oats with almond butter and pineapple, protein smoothie with spinach & frozen mixed berries

Breakfast: zucchini oats with almond butter and pineapple, protein smoothie with spinach & frozen mixed berries

I’ve always had a ridiculously easy time gaining weight… until I started trying to gain muscle. (Let’s be clear… no one tries to gain fat, it just happens… right??)  In the 12 weeks of my training program thus far, I’ve gained…

What I Ate Wednesday

Hello folks… welcome back to “What I Ate Wednesday!”  I haven’t posted this feature regularly for awhile, but I figured I’d start up again, not only to keep you informed about my training progress, but also to reiterate how much I DON’T do detox (it being January, the month for detox and all…) because I believe that every day is just another chance to nourish your body with wholesome, healthy foods….

What I Ate Wednesday

Hello friends, we’re back in the groove… of school, bootcamp, life!!  It feels good.

Coffee

Waking up at 4:30 doesn’t feel too good, though, but that’s what it takes for me to get myself together and have coffee & quiet time before getting the kids up at 5.  It’s early!  But I try not to complain, and the coffee & quiet time helps.

Pumpkin banana oat cookies

I’m back to my beloved banana oat cookies for breakfast… I missed these guys soooo much over the summer!…

What I Ate in Steamboat

The house at Little Creek

There are few places on earth I love as much as Steamboat Springs, Colorado.  The fresh air, the wildflowers, the crisp, cool mornings… plus, my aunt & uncle live here and we always have a fabulous time when we visit!

Steamboat Springs, Colorado

This gorgeous view is my reward for making it to the top of the hill where I walk every morning… nice, huh?  Sometimes I even get to see hot air balloons on their way up from the valley!…

What I Ate Before I Left

Usually, the day before I depart for “home leave” (the kids’ & my 6-week summer vacation in the US,) I run around like a chicken with my head cut off, eat whatever falls out of the fridge, don’t work out, and stay up way too late doing last-minute things.  This year has been different for some reason.  Maybe I’m finally grown-up enough to realise it’s not great to get on the plane already exhausted before a 28-hour trip…

Red lady papaya

So today I woke up when it was already light outside, which is pretty amazing in itself!  I had my usual coffee but NO banana oat cookie!  I promise you I haven’t abandoned them… …

What I Ate Wednesday

Stop the presses!!! I didn’t eat a banana oat cookie for breakfast today!!!

And I do admit I feel kind of weird about it.

Chocolate peanut butter almond meal muffin

I’m a creature of habit, and when I get a good thing going, I usually stick with it.  Like my beloved green smoothie and banana oat cookies for breakfast.  But I ate the last cookie without having time to make more!  It happens.  So this morning I had a new concoction of mine: the chocolate peanut butter almond meal muffin.  It was in all fairness a good substitute! I made these with the leftover pulp from making the almond milk, along with cacao powder, peanut butter, oats, & maple syrup.  Only 100 calories, but a whopping 4 grams of protein per muffin!…

What I Ate Wednesday

So I think you can assume by now that I had my green smoothie and a banana oat cookie with almond butter first thing this morning!  I’m definitely a creature of habit when it comes to my first breakfast: it’s quick, easy, healthy, and sits well with me during bootcamp, or any exercise.  That’s always a good thing!

Cherry Beetroot Smoothie Bowl

After bootcamp I took a long walk with a friend and came home starving.  I made this smoothie bowl with frozen dark cherries, half a frozen banana, 1/3 of a block of organic silken tofu, 1/2 a scoop of vegan protein powder, 1 T. each of flax meal & acai powder, a slice of fresh beet, and about 2 T. almond milk.  Then I topped it with …

What I Ate Wednesday

The key words here are: SALADS and SMOOTHIES!!!

It’s so darn hot here in Manila that I find myself living solely in the air-conditioned rooms in my house, scurrying as quickly as I can through its “obligatory hot-spots” (i.e., the living room, stairwells, and landings) which are un-airconditioned and usually hotter than outside.  If I were guessing, I’d say my stairwell hits 35 C (95 F) by about 11am.  It’s uncomfortable, to say the least….

Spiralling Green Smoothie

Do you ever wonder what I do all day?  My kids do…

I think they think I lie around and read books all day, which is what they would do if they were me.  Kidding!  They would actually lie around and play on their computers all day.

So I got up at my usual 4am, had my coffee & quiet time then checked my email and planned my day.  I also wrote today’s bootcamp workout- a body weight circuit.  It’s been super hot here so I toned down the intensity a little.

Breakfast #1 was my new favourite smoothie, which is my old favourite plus 1/2 T. of spirulina. …

What I Ate Wednesday

Well, one thing’s for sure: jet lag makes a person very hungry!  Maybe it’s because there are just so many available eating hours between 2am and 8pm…

Pumpkin chia overnight oats

It all started with about half a jar of pumpkin overnight oats.  It hadn’t had a whole night to soak, obviously, because it was 2:30 am when I ate it.  But it was a wonderful concoction: oats, cooked pumpkin, cinnamon, chia seeds, and coconut, soaked in homemade almond milk.  I topped it with…
