There are few places on earth I love as much as Steamboat Springs, Colorado. The fresh air, the wildflowers, the crisp, cool mornings… plus, my aunt & uncle live here and we always have a fabulous time when we visit!
This gorgeous view is my reward for making it to the top of the hill where I walk every morning… nice, huh? Sometimes I even get to see hot air balloons on their way up from the valley!
When I got back from my walk, I was hungry, so I had some fresh berries & a banana oat cookie (hello again!) topped with drippy almond butter.
Later in the morning we went into town and had “2nd breakfast” at a place called The Shack Cafe. All the locals eat here so you know it’s good. I ate plenty because I was going out to look at properties and might blow through lunchtime. I had an omelet with avocado, spinach, red peppers, & goat cheese. You can’t tell, but there’s 1/2 an avocado hiding inside! Yum. I couldn’t finish all this food, but I did my best.
This energised me for about 5 hours while out with the realtor, but when I got back mid-afternoon, I was hungry, so I had this snack: baked tofu, spinach leaves, & fresh cherries. Don’t judge me for the odd combination… I’d brought some grocery items along with me from Denver that needed to be used. This was actually a perfect snack because it was light, well-balanced, and already prepared. Love that!
It wasn’t long until “happy hour,” which occurs every afternoon at the house on Little Creek (another reason to love visiting here!) We sit on the deck, enjoy the view, a glass of wine, and a snack or two before dinner.
This afternoon I made kale chips to go along with our other goodies.
Dinner was simple and delicious: grilled fish caught by my aunt & uncle’s neighbour, fresh corn on the cob, salad, and an asparagus tart. A perfect way to end another perfect day in Steamboat Springs.
