Usually, the day before I depart for “home leave” (the kids’ & my 6-week summer vacation in the US,) I run around like a chicken with my head cut off, eat whatever falls out of the fridge, don’t work out, and stay up way too late doing last-minute things.  This year has been different for some reason.  Maybe I’m finally grown-up enough to realise it’s not great to get on the plane already exhausted before a 28-hour trip…

Stop the presses!!! I didn’t eat a banana oat cookie for breakfast today!!!

And I do admit I feel kind of weird about it.

Chocolate peanut butter almond meal muffin

I’m a creature of habit, and when I get a good thing going, I usually stick with it.  Like my beloved green smoothie and banana oat cookies for breakfast.  But I ate the last cookie without having time to make more!  It happens.  So this morning I had a new concoction of mine: the chocolate peanut butter almond meal muffin.  It was in all fairness a good substitute! I made these with the leftover pulp from making the almond milk, along with cacao powder, peanut butter, oats, & maple syrup.  Only 100 calories, but a whopping 4 grams of protein per muffin!…

So I think you can assume by now that I had my green smoothie and a banana oat cookie with almond butter first thing this morning!  I’m definitely a creature of habit when it comes to my first breakfast: it’s quick, easy, healthy, and sits well with me during bootcamp, or any exercise.  That’s always a good thing!

It’s so darn hot here in Manila that I find myself living solely in the air-conditioned rooms in my house, scurrying as quickly as I can through its “obligatory hot-spots” (i.e., the living room, stairwells, and landings) which are un-airconditioned and usually hotter than outside.  If I were guessing, I’d say my stairwell hits 35 C (95 F) by about 11am.  It’s uncomfortable, to say the least….

Spiralling Green Smoothie

Do you ever wonder what I do all day?  My kids do…

I think they think I lie around and read books all day, which is what they would do if they were me.  Kidding!  They would actually lie around and play on their computers all day.

So I got up at my usual 4am, had my coffee & quiet time then checked my email and planned my day.  I also wrote today’s bootcamp workout- a body weight circuit.  It’s been super hot here so I toned down the intensity a little.

This week’s edition of WIAW is otherwise known as “Can Bex clean out the fridge before leaving for 9 days on Spring Break?”

As much as I hate wasting food, I hate not eating fresh food even more, so the few days before leaving for a vacation pose a real challenge for me.  If I can manage to eat fresh fruits & veggies up until the meal before we depart for the airport, and yet not waste more than half a plate of food (whole family combined,) I pat myself on the back.  (Not that I like to add stress to the days before a big trip or anything…)

But maybe the intense focus of emptying the fridge keeps me on point for not forgetting important things like prescription meds… …
