This week’s edition of WIAW is otherwise known as “Can Bex clean out the fridge before leaving for 9 days on Spring Break?”
As much as I hate wasting food, I hate not eating fresh food even more, so the few days before leaving for a vacation pose a real challenge for me. If I can manage to eat fresh fruits & veggies up until the meal before we depart for the airport, and yet not waste more than half a plate of food (whole family combined,) I pat myself on the back. (Not that I like to add stress to the days before a big trip or anything…)
But maybe the intense focus of emptying the fridge keeps me on point for not forgetting important things like prescription meds…
Breakfast #1 (before bootcamp) was quick oats with cinnamon, dried cranberries, pumpkin seeds, & diced fresh pear. This breakfast was not too big because, obviously, I’m doing heavy exercise in an hour and a half and no one wants to see that again!
And of course I had my green smoothie. The reason it’s extra green is because I have one day’s worth of extra spinach to use…. in it went!
After 2 sessions of bootcamp in the ever-increasing Manila heat, I cooled off with a non-pictured fresh coconut water (only one left now!) while I made breakfast #2. This was surprisingly fast to make: 1/4 cup chickpea flour, 1/2 a scoop of Vega One protein powder, cinnamon, & 1/2 cup unsweetened almond milk. It made all these pancakes! I topped them with almond butter, a whole banana, & coconut flakes. So good. This kept me full for about 4 hours.
I was so proud of myself at lunch, because I emptied out all of these containers! Even more so when I decided to use up some lettuce by putting everything on a salad:
I used up all the cilantro by whizzing it with some soaked cashews & green chilies to make some beautiful green dressing. I guess I could have given that cilantro to the bunny rabbits instead… sorry bunnies, next time!
Lunch was so late I wasn’t hungry again until evening. Dinner was leftover brown rice with chili baked tofu, the cilantro dressing from lunch, toasted pumpkin seeds, roasted broccoli, and more salad. There’s about one day’s worth of salad left & one day to go, so I’m feeling pretty good about that.
After dinner, the kids cleaned up all but one row of pan cookies left over from the track party, and I had this: a sweet Medjool date stuffed with a square of dark chocolate and pecans. Not that I really had to use any of this up… it was just good.
Sometimes I think I must be nuts to play little games like this… but it’s these simple things in life that make the big things seem more manageable. Any one else do the same?
