What is this world coming to??? I didn’t have my “usual” green smoothie and banana oat cookies for breakfast!!!
And I admit I feel kind of weird about it.
I was feeling adventurous (for 5am) and I added frozen strawberries & bananas instead of pineapple to my smoothie along with the spinach & cucumber. The color was definitely not appealing, but the flavour was fantastic! I would do it again.
Along with this I had chocolate overnight oats that I made the night before with rolled oats, homemade almond milk, cocoa powder, a touch of coconut sugar, & dried coconut. In the morning, the oats had soaked up the milk but were still wonderfully chewy. I topped it with sliced banana, chia seeds, strawberries, & walnuts. I wondered if my kids would notice I was eating chocolate for breakfast… but they didn’t! Maybe they just thought, “There goes Mama with her oats again…”
Why the change this morning? Well, I wanted a filling breakfast because the kids & I had to go get fingerprinted at the Immigration Bureau for our resident visas, and you never know how long that’s gonna take! Fortunately it didn’t even take long enough for me to drink my whole Starbucks coffee, but I still didn’t regret my big breakfast at all.
I always love to eat mid-morning, so in the car on the way to drop the kids off at school, I delved into my emergency stash of food. I never leave the house without at least a box of raw almonds, and today I was extra-prepared, as you can see. I could have waited at the Immigration office 5 or 6 hours with these provisions! Luckily I didn’t have to… but anyway I ate one of the muffins and a few almonds.
Then my love called and asked me to meet him for coffee.
I wasn’t going to order anything to eat, because heck, I’d just had the muffin and all… but then he ordered, and no one likes to eat alone! And this eggplant & zucchini tart was so good…
So this is what actually lasted me 6 hours…
When I got home, I ate a tangerine while preparing dinner.
I must have been inspired by my lunch, because for dinner I made a zucchini fritatta that was reminiscent (kind of!) of the tart I’d eaten at lunch. Probably more healthy, though!
Along with this we had a caprese salad and oven roasted potatoes.
Remember that chocolate peanut butter freezer fudge from last week? Still have it… still delicious! I had a couple of squares of that after dinner, and then collapsed into bed.
