Apple Carrot Flax Muffins

Apple Carrot Flax Muffins

Maybe I’m imagining things, but I think it’s been a wee bit cooler here these past couple of days… as in, I had to put on a sweater whilst working in my air-conditioned kitchen! But hey, I’ll take what I can get, and go ahead and call it “fall.”.

Fall is my favourite season, you know.  It must have something to do with the apples, which, if you really pressed me on it, would have to be my choice in the “if-you-could-only-eat-one-fruit-for-the-rest-of-your-life” game.  Not that I would ever want to play this game… it’s just representative of how much I like apples.  They’re perfect to me: beautiful, crunchy, sweet, noisy, juicy, portable, and they go in everything….

Chocolate Chip Orange Muesli Bars

Chocolate Chip Orange Muesli Bars

I’m obviously into bars lately… no, not THAT kind!  The kind you eatmuesli bars like these chocolate chip orange muesli bars.  Mark did give Theda a start the other day though, when he was describing our evening at the “tapas” bar with friends last Friday night.  He was eating a muffin as he spoke and somehow “tapas” came out sounding like another word that goes with “bar” and it made Theda look at her mother in a whole new light.  Luckily I was on hand to do a quick muffin-free translation and save my virtue in my teenage daughter’s eyes!

But I digress… onto the muesli bars!!…

Vegan Blueberry Banana Muffins

Vegan Blueberry Banana Muffins

It’s July, friends, and US grocery stores are just bursting with summer blueberries.  I wonder if this in honour of US Independence Day on July 4?  I’m not really sure, and I’m not sure I care either… as long as I can get my fill of blueberries for the duration of my stay here… and for these yum-o blueberry banana muffins….

Golden Milk Chia Pudding

Golden Milk Chia Pudding

Ever heard of golden milk? It’s all the rage…

Don’t worry… I hadn’t either.

Golden milk is milk (or usually, a non-dairy milk like almond, coconut, or soy) flavored with cinnamon, turmeric, cayenne pepper if you’re brave, & sweetened with maple syrup (or honey if you’re not vegan.)

Golden Milk Chia Pudding

But why??? And is it even GOOD???

Second question first: golden milk is fantastic!! I was skeptical at first, …

One-Bowl Peanut Butter Banana Muffins

Peanut Butter Banana Muffins

Not that I’m ever giving up on my beloved banana oat cookies… but sometimes I just want to sink my teeth into a soft muffin for breakfast. And if those muffins can be made in one bowl with fewer than 10 ingredients, that’s gonna make my day, even more so if they involve the combination of peanut butter and banana.

Peanut Butter Banana Muffins

These guys came about when I was pondering what to do with my umpteenth batch of almond pulp from making my homemade almond milk.  I’ve done just about everything with it… …

Pumpkin Overnight Oats

Pumpkin Overnight Oats

As wonderful as oats are (at least I think they are!), a body can get tired of them always cooked into the same old hot porridge.  Besides, winter is pretty much over in most parts of the world, and who wants to eat hot oatmeal when it’s warm out?  Not me, especially not here in Southeast Asia, where it’s either hot, or hotter.  Right now it’s hotter.

Pumpkin Overnight Oats

So, rather than strap a feedbag onto our faces and give a whinny, let’s find a more civilised way to eat our oats cold, shall we?…

Green Smoothie Bowl

Green Smoothie Bowl

The hotter it gets here, the more refreshing a green smoothie bowl tastes, especially after a workout!  But I promise you, it’s fantastic even if you don’t work up a sweat beforehand.

Green Smoothie Bowl

I realize I’m late to the smoothie bowl train… what’s new?  But in my opinion, this train is parked at the station, and smoothie bowls will never go out of style, at least not for me.  First of all, a smoothie is just a drink… but a smoothie bowl… well now, that’s an EAT. …

Chocolate Orange Almond Muffins

Chocolate Orange Almond Muffins

Ever since I was a little girl, I’ve loved the flavour combination of chocolate and orange.  Baskin-Robbins used to make a flavour called Dark Chocolate Orange, and it was so dark it was almost black, really great I’m sure for my mother to try to clean off my face when I was finished.  But from the moment I put my tongue to that cute little pink taster spoon, I was hooked.  Rich dark chocolate colliding with the tangy sweet orange on my taste buds… well, it was like a flavour burst from heaven to my 5-year-old imagination.  But alas, Baskin-Robbins stopped making this flavour… …

Cranberry Maple Nut Granola

Cranberry maple nut granola

Something about getting back home to my kiddos after 6 days away from them made me wanna get in the kitchen.

This is always a good thing.

I mean, if they were little and I could spend all their waking hours with them to show how much I missed them, I would.  But hey, somebody has to go to school!  For 10 hours a day!  That means somebody else has to stay home and make yummy food to let the other somebodies know how much she missed them and she never never never wants to be away from them again.

Chocolate Chia Champorado

Add dried cranberries, chopped almonds, and unsweetened coconut for toppings!

Do you ever feel behind the 8-ball?

Now that I have a teenager and 2 other middle schoolers in my house, I do… on a daily basis.  Up until about a year ago, I thought I was pretty cool and up-to-date.  Now, I find out that “cool” isn’t even a cool word!  “Nobody uses that anymore!,” states a member of my household in the “under-15” age category, unable to bring herself to say the word.  I finally caught onto “EPIC!”… only to be informed last week that it is also OUT.  I was not, however, informed of the cooler, more-epic replacement word… because, you know, I might use it in front of her friends.

But I’ll tell you, I feel even more “behind” in my blog than I do with my teenagers.  I knew I was late to the game, but oh, I cannot catch UP!  Every cool and epic new food that I’ve been experimenting with and want to post, I find has already been posted 185 times per week for the last 6 months.  Just check Pintrest!  At least I am on Pintrest…

I could let myself be discouraged by this, but I’m not that type.  I also have a the unique situation of living in a Southeast Asian country, with its own traditional foods and delicacies, combined with my culinary curiosity and professional tendency to “health-ify” whenever I can.

Enter champorado.
