Just as I thought I was over jet lag, I wasn’t.
I slept for 10 straight hours Tuesday night and the first time I opened my eyes and looked at the clock, it was 9:14am. Whoa! This is coming from a girl whose normal wake-up time is around 5am, no alarm (it’s not virtuous, it’s just me…) But seriously, 9:14, without even a warning it was so late! I never even rolled over at 6:23 or anything like that… I guess I needed the sleep.
So my day started late, and by the time I’d had coffee, worked out, and cooled down, it was 11am, almost lunchtime! But as I always like to have breakfast as my first meal, I went ahead and ate my favorite chia breakfast pudding with strawberries and blueberries. This is an easy overnight pudding made with 1 cup almond milk, 2 T. chia seeds, 2 T. rolled oats, 1/4 cup Greek yogurt, and 1/2 cup cherries (in the pudding). You can also add 1 T. maple syrup to sweeten it, but I didn’t this time because the cherries & berries are pretty sweet. Then I topped it with more berries.
I also had some honeydew melon with more blueberries, because clearly, I can’t get enough blueberries.
Having had breakfast so late, I thought I would skip lunch. But I didn’t! I had this salad with lentils, goat cheese, tomatoes and red wine vinaigrette dressing, with some Ak-mak crackers. It hit the spot at around 3pm.
After lunch I experimented with a new recipe for cherry limeade popsicles, which look great!! We haven’t tried them yet but if they taste as good as they look, I’ll share… Of course I had to snack on some cherries while pitting them for the recipe.
Dinner was sort of a bust, not only because of the late lunch, but because my beloved TCU is in the College World Series!!! Not that I’m blaming them or anything… But the game began at 6pm which is our normal dinnertime. Since I hadn’t planned ahead for this, we had to have “snacks” while we watched the game. I had hummus and more Ak-mak crackers.
The kids had Goldfish and string cheese. This actually turned into our dinner (sorry, kids!!) because by the time the game was over, it was 9pm and we were all falling asleep. We were a little hungry, though, and I had made Coconut Almond Snack Bars by Hummusapien, meaning to save them for our company arriving the next day. But again, I didn’t!! They were the perfect bedtime snack, and so delicious that we barely resisted devouring the whole pan. This is the danger of not making dinner…
Sometimes things go according to plan, and sometimes they don’t. Sometimes I eat exactly what and when I planed, and sometimes I wake up at 9:14am, eat breakfast for lunch, skip dinner and eat Almond Joy bars instead. But hey, nobody’s perfect!
you forgot to mention – how many beers did you have while watching that TCU game????
