What I Ate Wednesday

Howdy, folks!  Yesterday began as an over-caffeinated, under-caloried, high-anxiety kind of day.  Ever have one of those??

I woke up super early… what’s new?  But maybe I won’t have jet lag when I get back to Manila- I can only hope.

Coffee

These days I certainly don’t need coffee, but I love coffee.  I also had some cereal before I went to Starbucks to use their wifi.

I spent too long at Starbucks, drinking brewed Sumatra, booking tickets, and catching up on all of my communications.  By the time I got home 3 hours later, I was ravenous.  I made some banana oat cookies, but while I was waiting for them to bake, I ruined my appetite by digging into the apple crisp left over from a couple of nights ago.

But I guess a girl could have a worse breakfast- this was made with apples, whole oats, oat flour, almond meal, maple syrup, & pecans.  It was really satisfying!

I also had half a sliced Honeycrisp apple and a pear.

Was it too much coffee??  I’m not sure, but after I ate, I felt like I was going to jump out of my skin!!  I thought I could get rid of some of my excess energy by going for a run.  And I did make record time for the 4+ miles. But towards the end of the route I had that awful but familiar starburst vision of an oncoming migraine… this happens when I don’t regulate my energy levels well.  The migraine actually does something to “re-set” my energy level, so it’s not all a bad thing- but I would never wish one on myself!

Migraines also take the edge off my appetite…

During the day I finally did have one of those banana oat cookies, with half a pack of this Wild Friends chocolate coconut peanut butter.  It was fab!  I’m gonna bring some on the plane with me.

And then that was all, which is so unusual for me!  Granted, we did spend the day running around doing errands and trying to get my car fixed… when it was already (supposedly) “fixed” the day before- and then broke down again in the exact same way.  Stressful??  Nah…

Kale chips & nuts

Around 4:30pm, we finally got home and everything was settled for the day.  And I was finally hungry!  So I made the rest of the kale into kale chips, which I ate while sitting outside chatting on the phone to my cousin.

For dinner we had salmon broiled with chili powder & garlic, boiled colourful potatoes (the purple ones are so gorgeous!), and steamed broccoli.  Simple but good.

Apple pie

We finished off with a piece of this lovely apple pie brought to us by my Pa’s generous neighbour.  Spiced with cinnamon & nutmeg, it filled us up with fall, with warmth, and with caring.  What a great way to end the day!

And only one more day till I’m back with my kiddos… how happy am I??  Happy Wednesday, everyone!
