It all started with a green smoothie…
You’d think I would get tired of this, but I don’t. Â I actually miss it when I don’t have it. Â To remind you what’s in it: a huge handful of fresh spinach leaves, 1 or 2 chunks of cucumber, 1/2 a fresh orange, 1 cup almond milk, 1 cup frozen pineapple, and a few sprigs of mint. Â This makes 2 big servings.
I also had a banana oat cookie smeared with a little almond butter, and some apple slices.
At bootcamp today we did the Ladder workout.  In 45 minutes we did 75 pushups, 119 squats, 94 standing rows, & 75 burpees… it sounds kind of demoralising, but it’s not!  I mean, we didn’t exactly know our totals before we started… but each set progressively has more reps, up to a maximum number, then you work your way back down to the beginning set which only has a few reps.  It’s an effective way to build muscular endurance.
And it made me really hungry!! Â I reckoned that 10:30 might as well just be lunch, to “justify” how much I was gonna eat. As if I ever need to justify! Â Anyway, I made a chickpea pancake out of 1/4 cup chickpea flour, a dash of curry powder & 1/4 cup water. Â It cooks just like a pancake in a non-stick skillet. Â I topped it with an over-easy egg, some hummus, leftover salad, some almond flakes & pumpkin seeds, & a drizzle of pumpkin seed oil. Â You can’t tell everything that is in there, but once it was all munched up, it was fabulous!! Â I was a little sad when it was gone.
I needed to leave for school by noon, and would be gone until 8pm.  Awkward timing for the rest of my meals, right?? I know!  And I was still just a leeettlle bit hungry even after that huge pancake thing I ate at 10:30.  So I made a take-away smoothie with a frozen banana, almond milk, a scoop of Vega Protein & Greens, a spoonful of Peanut Butter & Co chocolate peanut butter, & a splash of instant coffee mixed with water.  Oh man!  I wanted to die over this new flavour concoction.  It was like a rich thick milkshake.  I would have felt a bit guilty had I not known how healthy it was.  I sucked it down on the way to school and it kept me full for the next. Eight. Hours.  Amazing huh?  I never go this long without eating!  Except at night.
When we got home from the Middle School Choir concert, (in which I have to say Sara sang like an absolute angel!,) we were all hungry. Â We had Alexis’ Vegan Mushroom Tofu Chili and a slice of polenta, then went to bed with happy tummies and a song in our hearts.

Aw, thanks Jacklyn! 🙂 Yes let me know how you like the banana oat cookies… they are a staple at my house! Feel free to put any add-ins you like- they are so versatile. For me the cucumber adds a freshness to the smoothie and in this constantly hot climate, it works! 😉 xx
