What I Ate Wednesday

I love Wednesdays.

Morning coffee

First of all, my kids have “late start” at school, so while they sleep in, I get to enjoy my coffee & reading/prayer time a bit longer.  Sometimes I wish I could sleep in, but usually I just relish the extra minutes.

Another good thing about waking up early is that it gives me time to eat before my bootcamps begin.  I’m not a fan of working out in a “fasted” state.  To me this makes no sense- why exercise with an exhausted supply of stored carbohydrate? Yes, we also burn fat, but fat is a secondary fuel, and it burns “in the flame of carbohydrate.”  In other words, we need some carbs in our system to efficiently burn fat.  Plus, if we eat a small snack or breakfast before working out, we’ll feel more energised, be able to work out harder, become more fit, and burn more calories in the process.  And what could be bad about that?

Green smoothieOatmeal with almonds & dried blueberries

You don’t have to eat a lot of food…  Today I had my usual green smoothie and a small bowl of oatmeal with chopped almonds and dried blueberries.  I don’t suppose there’s any way to make oatmeal look appetising in a picture, but this was actually pretty good.

Chickpea pancakes with hummus & hot sauce

After the workouts, I’m always famished.  I started with these mini chickpea pancakes with hummus and hot sauce, and some chopped pineapple, but it just wasn’t enough…

Banana chocolate chip snack bar

…so I had a banana chocolate chip snack bar with chocolate peanut butter (yes, that’s a thing!)  It hit the spot and I finally felt full.

Chocolate almond latte

Before my late lunch, I enjoyed an iced latte with chocolate almond milk while organising my next cooking class.

Quinoa, roasted veggies, green beans

My lunch was leftovers from last night: quinoa, roasted tomato, pumpkin and eggplant with cilantro chili cashew cream, and vegan meatballs inspired by Minimalist Baker.

No-bake peanut butter oat squares

After lunch I was going to have just ONE peanut butter square… but two stuck together, lucky me!  I figured this was a harbinger of good things to come as I went to meet with my graphic designer.  She’s creating a logo for The Expat Dietitian and I cannot wait to see her ideas!!

It had taken volumes of food to fill me up to this point in the day, but anymore, I do tend to go with my appetite.  Where I used to try to suppress my hunger until evening, as dinner has traditionally been our main meal of the day, now I find that on my high-energy days, I consume most of my calories by 2pm.  Of course I do still make dinner!  I am a mom to 3 hungry kids, after all…

Rice noodles with tofu & broccoli

Tonight we had rice noodles with baked tofu, broccoli & a chili soy sauce.  The kids called it pancit (a Filipino noodle dish) and loved it so much they all want to pack the leftovers for lunch tomorrow.  Score!  I finished off my wonderful Wednesday with some lovely slices of pomelo, fresh from the province, and went to bed dreaming of my new logo.  Happy Wednesday, everyone!

  1. I am definitely more hungry in the earlier part of the day. I like how you split your breakfast up according to your workout. I am going to have to try that, because like you I don’t like working out on an empty stomach, but I also know I need protein after working out!
    The banana chocolate chip snack bars have caught my attention, I am totally checking those out!

    1. Hey Kate, thanks for stopping by my blog! Yes, I’m also ravenous during the day… we gotta just go with it, right?? I almost always eat 2 breakfasts, first high in carb, second high in protein. Let me know if you try the banana choco chip snack bars, I think you will totally love them! 🙂

  2. I’m not a fan of early morning workouts on an empty stomach either. I just feel so drained and all I can think about is FOOD haha. Just came across your blog for the first time and can’t wait to explore a bit more. Everything looks so so delicious!!

    1. Hi Jacklyn, thank you so much, you just made my day! 🙂 I know, the thought of working out on an empty stomach just makes me feel sad… well, I wouldn’t work out, haha! So, I say, BRING ON THE FOOD!!
