5 Exercises that Will Get You Out of Your Chair

Chair Pushups

You’re probably sitting down as you’re reading this, and I hate to tell you this, but you should really stand up.  Too much sitting will kill you!!  Ok, so I’m being dramatic, but recent studies over the past 2 years have linked prolonged sitting (more than 8 hours per day,) with a number of health concerns, including obesity, metabolic syndrome, cardiovascular disease, and cancer.  And what’s worse, being a “weekend warrior” (i.e., working out vigorously a few times a week) won’t offset these risks.

So what are we gonna do, friends? …

My Mother was Right About Everything

Pesto Quinoa White Bean Burgers

This evening I channeled my mother by walking into my kitchen at 5:15pm without any idea what I was going to make for dinner. I opened the refrigerator door and stood perusing its Tupperwared contents, seeking inspiration.  A few chunks of leftover roasted pumpkin… no.  Newly made coconut kefir… good, but no.  Half a box of barely-good-the-first-time leftover Vietnamese from the weekend… definitely not.

But then I spotted a big zucchini, some (relatively) fresh homemade pesto and cooked quinoa,…

What Happened When I Didn’t Work Out

O'Heynes Abbey

I always pack my workout gear when I travel.  Usually, a pile of it… workout tights & sports bras are allotted an embarrassingly high percentage of volume in my suitcase. Even knowing how much we were going to be traveling on our Irish vacation these past 11 days, I hopefully packed 2 outfits and figured I wouldn’t sweat that much in the cooler weather….

What I Ate at The Farm

Flower arrangement at The Farm

You wouldn’t think a 95% vegan would come away from a 24-hour stay at The Farm feeling so refreshed, rejuvenated, and revitalised as I did… but I did!! The Farm at San Benito is a spa resort about an hour and a half south of Manila, and their mantra is “Nurture Yourself from Within.”  They specialise in world class spa treatments… and their restaurant serves vegan food, most of which is grown in their own organic gardens.  Mark and I spent the weekend there to celebrate our anniversary.

Veggie Spring Rolls with almond sauce

We were surrounded by beauty & tranquility our entire stay, and the beautiful food only enhanced our experience.  After check-in, we enjoyed a gorgeous lunch in their open-air restaurant.  We shared an appetiser of fresh spring rolls…

My Unplanned Hiatus

Hello friends, long time no blog!  It’s been over 2 weeks since I last posted… it seems like forever!!  I even planned ahead for this time period by creating recipes, doing photo shoots, editing pictures, etc.  I have recipes in my laptop cookbook and a stock of beautiful photos ready to go in my Media file, for heaven’s sake!  But then… I just didn’t!!…

What I Ate (and did!) in Austin

Fish tacos

Howdy, y’all!  I’m in Texas, so this greeting just comes naturally.  I’ve been away from the blog for awhile, because we’ve  been visiting friends and family, and I have to say, my baby nephew is so completely adorable and charming that I haven’t sat down at my computer one single time.  And I’m not even sorry!  Babies grow up too fast…  …

What I Ate in Steamboat

The house at Little Creek

There are few places on earth I love as much as Steamboat Springs, Colorado.  The fresh air, the wildflowers, the crisp, cool mornings… plus, my aunt & uncle live here and we always have a fabulous time when we visit!

Steamboat Springs, Colorado

This gorgeous view is my reward for making it to the top of the hill where I walk every morning… nice, huh?  Sometimes I even get to see hot air balloons on their way up from the valley!…

Leaving Season

Leaving Season

I confess, my  roller-coaster emotions of late have little to do with my struggles to find a new use for my almond pulp as suggested in my previous post

No, they have more to do with the fact that it’s that unique season every ex-pat recognizes, usually at the end of May and early June, known as “leaving season.”  (Ok, so maybe that’s not actually a sanctioned term… maybe I made that up just now… but whatever, it fits.)

Some seasons pass me by without so much as a wink.  This one sank its teeth into me like a wolf, and isn’t through shaking me yet….

Happy 1st Birthday to The Expat Dietitian!

Chocolate zucchini birthday cake

I love birthdays!!  And it doesn’t even have to be my own!  But now… I do have another birthday to celebrate each year: the birthday of this blog!!!  Can you believe it was one year ago today that I first hit that “Publish” button to bring “The Expat Dietitian” into being?

Friends, looking back on this [fantastic, amazing, sometimes frustrating, mind-boggling, sleep-losing, & ultimately rewarding] year of blogging has brought all sorts of thoughts & remembrances into my mind…

As absolutely terrified as I was to press “Publish” that first time, with the Banana Oat Cookies… I was even more terrified…

Childhood Nutrition: Empowering Kids to Eat Well

Childhood Nutrition: Raising the Next Generation of Healthy Eaters

So I haven’t had any public speaking engagements since October, then lo and behold, I’ve had two this week, both on childhood nutrition… Go figure!

Much of my career has been spent in the realm of helping kids eat healthfully. I’ve done everything from inpatient & outpatient hospital work, to school foodservice, to being a member of the psychiatric team for emotionally disturbed adolescents.  And then, I’ve been feeding 3 kiddos of my own for over 14 years, so there’s that!

Childhood nutrition fascinates me because it’s more than…
