It’s been a mango kind of a day…

My friend Emilie has a mango tree in her backyard, and last fall it was sprayed so that it would flower properly and produce fruit.  It was not a blessing (more like a curse!) when all the flowers fell off and clogged up her pool, but pretty amazing now that there are hundreds of gorgeous ripe mangoes ready for harvest.  Just look at these beauties!!!  I’ve eaten mangoes from several countries in Southeast Asia, as well as from Mexico, and sorry to spout my opinion to you so freely, but…

Mangoes, how do I love thee?  Let me count the ways…

Breakfast was this chia pudding made with homemade vanilla almond milk, unsweetened toasted coconut, rolled oats, and diced MANGOES.  I also had a MANGO muffin made with coconut flour & the almond meal left over from when I made the almond milk.  And a green smoothie that surprisingly, I put frozen pineapple into, not MANGO.

Lunch was a pita bread with leftover camote falafel and MANGO salsa.  It was a fabulous flavour combination, but I still sort of felt like I wanted to eat the salsa by all itself, or better yet, with tortilla chips.  However, I DO have leftovers to clean out of the fridge!  I also ate the papaya that I never ate at breakfast.

I snacked on some popcorn and sliced apple later in the afternoon…

Stove-Popped Popcorn

Dinner was some blackened tofu (jerk seasoning, cumin, & extra chili powder), over quinoa with edamame and more MANGO salsa.  I also made some sauce from homemade chili jam, calamansi juice (calamansis are like little tiny limes with a unique citrus-y flavour), soy sauce, and coconut sugar, to pour over the tofu.  I didn’t even intend for dinner to be anything elaborate- I’m up to my eyeballs in packing, for heaven’s sake- but this turned out REALLY GOOD!!!

And then, to top it all off, look what I had for dessert!!  MANGO sorbet!!!  With a bit of coconut cream on top and some date/almond crumbles that I found in the freezer (left over from some dessert crust I’m assuming)- what a bonus!  It’s been a pretty lucky & delicious day food-wise for me.  I didn’t even have to “strive” to eat well- I just did.

Mangoes, I’m gonna miss ya… but I’ll be back at the end of summer, and you’ll be as good as ever.

(Disclaimer: this is actually “what-I-ate-Tuesday” because of my impending flight- forgive me?)

  1. Love the mangos, too! I’m even a fan of chia pudding now – I’ve come a long way from bacon and eggs for breakfast. Sorry, Bec, I’m going out for steak tomorrow, though. But I’ll have mango something for dessert!
