Vegan Banana Bread

I’ve been on a banana bread kick lately.  Not only do we always seem to have bananas going soft on our counter (who doesn’t?), but also I’m finding so much more freedom in my diet now that my show is over.  I’m still eating well… plant-based, plenty of veggies, adequate protein to fuel my lifting… but I’m definitely indulging in treats if I want them.  Whereas in the weeks leading up to the show, my diet was pretty strict and I focussed on completely nutrient-dense foods with very few extras.  I didn’t mind, because…

Hello friends, it’s pumpkin season!  (At least it is in North America!)  And actually, in Philippines, it’s pumpkin season all year long… Philippines has beautiful local pumpkins called kalabasa that are a bit softer and milder than “jack-o-lantern” pumpkins.  I do everything with them, from roasting slices with cinnamon & curry powder, to cubing them up in curries, to pureeing them for pies……

Our weather took a turn to the cool(er) side a couple of days ago!

In Philippines that means it didn’t get above 93 F (34C) during the day, and down to about 75 F (24C) at night.  This is as close as we’re gonna get to autumn, folks.  Sometimes I create my own little fall/winter in my home office by blasting the air-conditioner and pulling on a sweater, but please, let that be our little secret…

So it was a cloudy and reasonably low-humidity day.  I looked out my window and imagined it was that really cool, crisp, almost biting fall weather that would beckon me outside to wade through the fallen leaves and pick apples and pull a  cozy scarf around my neck to keep the chill off.

And then I turned the air-conditioner off, ditched my sweater, and went downstairs to make this curried pumpkin soup….
