Spicy Tofu Wraps with Citrus Tahini Dressing

These spicy tofu wraps with citrus tahini dressing just might be the solution to all your lunchtime woes…

Lunch is sometimes a problem, do you get me?  Like, breakfast is a no-brainer (good thing at 5:45am!) and dinner… well, I usually have some idea of what I’m going to cook.  But lunch… it’s usually the meal where I wind up standing in front of the open fridge and just hoping for inspiration.  Anybody relate?

But finally, I’ve been making this spicy tofu that can easily be wrapped up with a citrus-y, garlicky, creamy tahini sauce to create the perfect lunchtime sandwich.  All of these components can be made ahead and used together, by themselves, or paired up with other things.  But in any case, this one little recipe can keep you going throughout the week and beyond.

I know some people are scared of tofu, and that’s ok.  This is an easy recipe to try it out, because the tofu is highly seasoned and mixed with other things.  Such a gentle way to begin your tofu-eating career!  (But if you really must, you can also use chicken breast in place of the tofu & I won’t judge you.)

The key to really good tofu is first, select the proper type… it comes in all consistencies from silken (perfect for smoothie bowls) to extra-firm (what you want for this recipe.)  Second of all, get all the extra water out of it!  Tofu is kind of like a sponge… in order to soak up the yummy marinade, you’ve got to squeeze it first.  The best way to do this is by slicing it in half, wrapping it between layers of kitchen towels, and stacking some cutting boards on top.  You could also use a tofu press, but to me that’s just one more piece of kitchen equipment.

Once your tofu is pressed (which takes about 20 minutes, just enough time for you to make your tahini sauce & assemble your other ingredients), everything comes together very quickly.  The marinade is simple, using only 5 ingredients, and the tofu bakes in just 15-20 minutes.

Don’t forget the citrus tahini sauce!  This easy dressing takes only 5 minutes to whip up and will become a mainstay in your fridge.  Not only does it take your wrap to the next level, it’s amazing on veggie burgers, any grilled meat or fish, and as a salad dressing.  How’s that for versatile?
