What I Ate Wednesday

Hello friends!  It’s nice to be back in the land of the living!  I spent the last (almost) 2 weeks fighting a nasty respiratory virus that knocked me off my feet, literally.  I did nothing after getting the kids off to school except rest and sleep in order to muster the energy to make dinner.  I began to wonder if I would ever feel better.  But I finally did…

Green smoothie

Apple with cinnamon

Enough to teach bootcamp yesterday, hooray!  Before bootcamp I had my green smoothie (duh) and half a sliced apple with cinnamon.  I would have had more, but I’m still sleeping in a bit later than usual, and my time was too tight to eat more.

What I Ate Wednesday [Recovering]

Howdy folks!  That little head cold I mentioned a couple of posts ago? … turned into a full-blown sinus infection.  Shows what happens when you let yourself get run down… or just breathe in the wrong germ, I guess!  But unless I’m sick to my stomach, I don’t see illness as a reason not to eat… I don’t buy into that “feed a fever, starve a cold” thing… or is it the other way around, I can never remember!

So even though my appetite was “low” (for me,) I still ate…

What I Ate Wednesday [Taming the Hunger Beast]

It started out, as Katniss Everdeen would put it, as “a hollow day… a day where no matter what you put in your belly, it’s never enough.” (The Hunger Games, Suzanne Collins, Scholastic Limited, 2008.)

Green smoothie

Banana oat cookie with strawberry cashew cream & fresh strawberries

I had my green smoothie, as usual, but instead of a plain banana oat cookie (the usual,) I topped it with my new fave- strawberry cashew cream- yes folks, it is sooo good! and fresh strawberries.  Don’t you love how it goes with my cute little plate?  Too adorable for words, right??

Speaking of adorable, aren't Turbo & Askal so cute together???

Speaking of adorable, aren’t Turbo & Askal so cute together??? My friend rescued Askal & he is doing great

This should have been enough to hold me over through my walk and endurance class, but it wasn’t.  I was so ravenous by the time class was over that I inhaled an apple cinnamon almond meal muffin before I remembered …

What I Ate Wednesday

Chocolate orange almond muffin & fruit

Breakfast: chocolate orange almond muffin, almonds, & fruit

I had one of those rare and magical days where I did not leave the house except to make bus stop runs.  Not that I would want every day to be like that… then it wouldn’t be magical anymore, hey?  But normally my days are so full that I never even sit down except to eat, and even then I’m usually just perched on my kitchen stool.

Banana berry smoothie

Morning snack: banana-berry smoothie- 1/2 frozen banana, 1/2 cup frozen berries, & enough almond milk to make it move in the blender

Sara was home with me, not super sick, but with enough of a cold to warrant a rest day, given that THE SHOW is this week…

What I Ate Wednesday

I was halfway through my morning when I realised I’d forgotten what day it was, & I should have been clicking pix of what I ate.  But never mind, you guys know me by now… I had a cup of coffee, the green smoothie, and a banana oat cookie with almond butter.  I’m a girl of routine!

We had a great run in cardio class this morning and the endurance work is really paying off.

By the time I cooled down, I was ready for “2nd breakfast,” which consisted of this smoothie…

What I Ate Wednesday [Catching Up]

Green smoothie

I love days like today… one of planning, preparing, and doing… one of feeling ahead and not behind… of being proactive and not reactive. This doesn’t happen often!  But I’m hoping it happens more, because one of my goals for 2016 is planning more planning days.

Toast & fruit

Today started with the green smoothie like always, along with a piece of  rye toast, peanut butter, and a clementine orange.

I’m soooo sore from yesterday’s bootcamp, which I’ll give you later this week.  I figured “running out” the soreness at today’s endurance class would help, but no.  My quads are still in pain.  Today’s workout did make me hungry though!  I love being hungry after a good workout because then I get to eat again….

What I Ate Wednesday [Back to Routines]

Don’t let my kids hear me say this, but after the holidays, I always look forward to getting back to “the routine”…

Green smoothieCall me crazy, but I love routines… getting up early, exercising, making that same green smoothie, having regular down time… I find my predictable schedule both soothing & satisfying.

(The kids & I took a Buzzfeed quiz to see which StarWars character we would be, and one of the questions was, “What is your worst habit?”  It was multiple choice, but the kids answered for me hands-down: “Too attached to your routines!!”  They know me well…)

Bootcamp started up again after a 2-week hiatus, and even though I stayed active and worked out during the break, it’s just not the same as sweating it out with my girls during 2 sessions of bootcamp!  So thanks for coming yesterday, ladies, even though I know not all of your kids are back in school yet….

What I Ate Wednesday & Christmas Presence

Hey friends, it’s Thursday afternoon, a good 36 hours after I usually give you “What I Ate Wednesday”…

Breakfast: green smoothie bowl with random toppings

Breakfast: green smoothie bowl with random toppings

This is due to:

a. Baking a bazillion (ok, a few dozen) sugar cookies with my kiddos.  These particular ones are a big tradition in my family, and I’ve baked them with my kids ever since they were old enough tho wrap their sweet little hands around a cookie cutter.  It’s something we wouldn’t ever think of NOT doing.  But halfway through, Tommy looked up and thanked me for always doing it anyway.  For him (for all of us!) it’s a tradition that really makes it seem like Christmas.  I love that he would be conscious of his gratitude for this simple thing, and love even more that he would express it to me.

Cookie making collage

Then we laughed about how they should really be thankful that I’m still making them “normal” and not putting “weird stuff” like zucchini or chickpeas in them!  Lol, my kids know me too well!

b. Playing an epic game of Risk with the kids that spanned over 2 days.  This is the best kind of family game- alliances, camaraderie, battles, strategies, competition… I love it!  It was Sara’s first time to play and in about 5 turns she owned half the board…

Lunch: tofu quiche, brown rice, cabbage salad, green beans... the smiley face happened all on its own, I swear!

c. Taking a surfing lesson at Club Manila East with Philippine Surfing Academy with Tommy and a bunch of friends.  This was our first time to try, and I was mightily impressed.  For a surprisingly small price, the 6 of us had 3 professional surfing coaches who had us all standing up on our boards on our first or second tries.  It was exhilarating!

d.  Seeing the premiere of Star Wars, which hasn’t even opened in the U.S.  It was awesome.  Enough said.  I won’t spoil it for you.

Dinner: pasta with roasted veggies, feta, & fresh basil

Dinner: pasta with roasted veggies, feta, & fresh basil

As I did all of these activities with my family over the past 3 days, Wednesday’s unwritten post hovered somewhere in the back of my mind like unfinished homework.  The more compulsive side of me wanted to get all nervous about it, but I’m doing better about keeping that bad boy down.  I’m reminded that in all seasons, presence is worth so much more than accomplishment. And at Christmastime especially, when it’s easy to get all wound up in gift-buying and wrapping and “need-to’s,” maybe it’s time to just step back, make a cup of hot chocolate, and play a good game of Risk with your kiddos.

Dessert & random snacks throughout the day: chocolate-dipped cranberry pecan kisses!

Chocolate pecan kisses certainly don’t hurt either, and they only take about half an hour to make… just sayin’.

Happy Thursday before Christmas, folks!

What I Ate Wednesday

Although it’s December, and snow has fallen several times for my family in Colorado, here in Philippines it’s still hot, hot, HOT!!!  Which means I usually can’t bring myself to eat cooked oatmeal, no matter how high I crank up my air-con.

Smoothie bowl

So today I had a smoothie bowl.  I’ve been really into these lately!  It’s my regular green smoothie, but with a scoop of Vega protein powder and about half the amount of almond milk.  That makes it thick enough to hold up all my toppings: almond flakes, homemade cranberry orange relish (made low-sugar with chia seeds instead of all the sugar!), papaya from our very own tree, hemp seeds, & dried coconut.  It’s cold, it’s creamy, it’s beautiful… I think I’m addicted!

In today’s workout we ran 6k at a pretty good clip.  I love this new addition to the weekly schedule- the steady pace run is so different than our normal high-intensity bootcamp.  I drank about a litre of water when we were finished, and ate this banana oat cookie with almond butter, a sliced strawberry & a sprinkle of dried coconut on my way out the door to Bible study.

Yes, we brought out the Christmas plates!

Yes, we brought out the Christmas plates!

When I got home, I was absolutely ravenous.  While I made my lunch, I ate 2 rye crackers with basil hummus without thinking to take a picture.  Then I sat down like a normal human being and had a few polenta squares with goat cheese & tomato chili jam.  These were leftover from Friday night’s party & I added fresh mint and more chili jam to pop them up a bit.

Shredded beetroot & carrot salad

I also had a big shredded beet & carrot salad, dressed with a maple orange dressing.  I threw some hemp seeds on top to add a little protein & crunch.

Christmas mall lights

The mall was hardly crowded at all- amazing!!

After lunch I felt fortified enough to brave the mall for some Christmas shopping.  This can be a bit dicey in Philippines at this time of year- you should really try to be finished by September 30 at the latest to avoid the crowds.  I’m serious.  But I did well!  Meaning I crossed at least 5 things off my list!  And kept smiling for 3 hours!!  I’m so proud of myself.

Vegan cookie sandwich

I finished just in time to wait 45 minutes at the bus stop, because apparently the kids were stuck in the crowds that I managed to avoid at the mall.  So by the time we all got home I was starving.  Again.  And even though I admonish my children “Don’t ruin your dinner!” with a late afternoon snack, I broke my own rule with this double chocolate peanut butter cookie sandwich.  It was totally worth it.

Pasta with goat cheese & pine nuts, roasted pumpkin with chili jam, & green beans

Obviously, by the time dinner rolled around 2 hours later, I wasn’t hungry, whoops.  I couldn’t finish my food.  I pushed it around on my plate and tried to eat my vegetables.  At least!!  I scolded myself for setting a bad example for my children.  It happens sometimes!

Sara's Egyptian pita bread

But then after dinner we baked Sara’s beautiful Egyptian pita breads for her “Culture Cafe” project at school.  And who could resist those?? We all had to sample one and they were absolutely delicious.  Sometimes you just gotta break the rules!!!

Happy Wednesday, everyone!

What I Ate Wednesday [Getting Out of a Slump]

I’ll admit, my appetite has been very “off” lately, and that’s unusual for me.  Normally I wake up hungry, have interesting ideas for what to cook, always have baked goods on hand, am inspired for what to make for dinner, etc.  Not so lately.  I’ve been very blah about my food and eating in the past week.  Sad, given that it was Thanksgiving!  But luckily for us we were invited to a friend’s house for our Thanksgiving feast, so my lack of enthusiasm in the kitchen went largely unnoticed.  Phew!

Pre-workout breakfast: apple cinnamon oatmeal with raisins & pecans

Pre-workout breakfast: apple cinnamon oatmeal with raisins & pecans

I guess we all go through that every now and then, a slump in the kitchen.  I just think I’m not “supposed to” because of my profession.  I’m a dietitian, after all!!  A foodie!!  I should always be whipping up something yummy!  Right? …
